Smokin'

Matthew and Ken decided that they should smoke some of the meat we purchased when we got our big stash of beef this year.  First they tried to rent a smoker from HyVee.  No go.  Then one of Matthew's bosses said he would just smoke it for him.  That was a no go for me.   All we needed was for Matthew and his colleague to get in trouble.  (The meat was purchased from a small farm, not HyVee!)  Not worth it.  So then I remembered my good buddy's husband sometimes smokes meat.  (I just wasn't ready to commit to a smoker without having tried it first.)  They kindly let us borrow their smoker, including delivery....such nice people!

As it ended up, most of the work fell to Matthew because we didn't want Ken out of his room. (Poor timing perhaps, but we are running out of time with Matthew heading back to Iowa City as soon as he gets his Covid PCR results.  He could go sooner, but we need to find out about Carolyn and if they should ride in a car together.  Ah the joy of an extremely contagious disease.)
 

That said, Matthew blew a fuse and Ken came to help after all (masked up for safety)!

Look at this delicious brisket.  It tasted like Smokey Ds....which is our favorite BBQ restaurant.  We have celebrated many an occasion during the pandemic with Smokey Ds take-out.


Given how much work it is to smoke meat...I would vote for take-out.  However, I believe Matthew loved the process and he did all the work!!!!  We will just have to smoke meat when the weather is warm enough that we can snake an extension cord through our window to our big amp plug in!  (We had to have it put in to run our treadmill....another crazy time in the world of McCleary electricity!)
